Make It Christmas All The Time With These Tropical Holiday Cocktails

The New Year is here, but you can still be as festive as you’d like with a new batch of recipes.

What's the first rule of cocktails? Enjoy them whenever you feel like it. Even if it's the middle of summer and you find yourself in the mood for a frosty coquito, as long as you have the ingredients, you have a green light. After all, there's no law that says peppermint is limited to December, so follow the advice of Donna Meagle and treat yo' self.

We had so many wonderful, delicious holiday cocktails to choose from this year, but we certainly didn't have enough time to make them all. So, we're sharing even more signature resort seasonal cocktail recipes with you as well, because we might not even make it to our favorite spots by next Christmas anyway, so why not indulge at home?

Christmas Tide

The Place: Cayo Espanto

Ingredients:

  • 2 oz Kahlua
  • 4 oz Belizean Rum Popo
  • 2 candy canes
  • 0.25 cup sugar
  • Ingredients for Belizean Rum Popo:
  • 3 eggs
  • 3 cup evaporated milk
  • 1.25 cup sweetened condensed milk
  • 0.5 cup Belizean gold rum
  • 1 tsp vanilla
  • 1 tsp fresh nutmeg
  • 1 tsp cinnamon

How to Make It:

In a mixer beat the eggs for 5 minutes until light and fluffy, add the evaporated milk, condensed milk, vanilla, and spices continue to mix on high 2 minutes.

Add the rum reduce speed to low. Mix an additional 2 minutes, store in an airtight container in the fridge.

Crush the candy cane with the sugar. Dampen the edge of a chilled martini glass and dip into the candy cane sugar mixture and pour Kahlua in the bottom.

Add the Rum popo to a shaker with ice and shake 20 seconds. Slowly pour the chilled rum popo into the side of the glass as not to mix with the Kahlua. Garnish with candy cane and fresh mint.

Coconut and Nutmeg Christmas Punch

Ingredients:

  • 2 oz dark rum
  • 1 oz coconut milk
  • 1 oz whole milk
  • 0.5 oz cream of coconut
  • 0.5 oz nutmeg syrup (honey or simple syrup)
  • Freshly grated nutmeg

How to Make It:

In a cocktail shaker filled with ice, combine dark rum, coconut milk, milk, cream of coconut and nutmeg syrup. Shake vigorously. Strain into glass and top with freshly grated nutmeg.

Apple Christmas Drink

The Place: Grand Residences Riviera Cancun

Ingredients:

  • 4 oz sparkling wine
  • 1 oz Sprite
  • 1.5 oz Apple Pucker
  • Fresh strawberry, blueberry and raspberry

How to Make it:

Pour the sparkling wine into a glass, add the Sprite, Apple Pucker and four ice cubes, and make a skewer with the red fruits to decoratively place inside the glass Sit back, relax and enjoy!

Christmas Wish

The Place: Mount Cinnamon

Ingredients:

  • 6 oz Sorrel juice
  • 1.5 oz local dark rum (the resort uses Westerhall Rums Grenada) ⠀

How to Make It:

Shake and strain over ice into poco grande glass. Top with whipped cream. Garnish with cherry, a mint leaf, a dash of nutmeg and gingerbread biscuit.

Holiday Saril Cocktail

The Place: The Buenaventura Golf & Beach Resort

Ingredients:

  • 45 ml Bombay Gin
  • 30 ml Saril (Hibiscus) Cordial
  • 30 ml of lemon juice
  • Splash of Prosecco

How to Make It:

Mix all ingredients in a glass with large ice cubes. Garnish with a Hibiscus flower and cotton candy mint.

Ginger Lemonade for All Seasons

The Place: Ocean Club Resorts

Ingredients:

  • 1 piece or 10 cm (70g) of ginger peeled and chopped
  • 1 cup of lemon juice (about three to four lemons)
  • 1/3 cup of maple syrup
  • 6 cups of water
  • 2 lemons cut into slices for garnish

How to Make It:

Place the ginger in a food processor or blender. Add fresh lemon juice and process until smooth. Add water and maple syrup. Mix well. Strain out ginger pulp. Serve in glasses filled with ice.

Add white rum to taste for a more "happy hour" inspired holiday drink.
