Visiting Cancun is always about the beach. Lay on it, play on it, fall asleep for a day on it—there's a very good reason people return to these beaches year after year, from high-energy college students to hopeless romantics who fell in love in Cancun years ago and consider it a part of their epic love stories. And for anyone who thinks it's just a sleepless party destination, well, you keep thinking that. The rest of us know better.
But sometimes we need a break from the beach, whether because of the crowds or to escape the bright Mexican sun. In those times it's great to have a private spot for shade and snacks, and it certainly doesn't hurt if that spot has a pool, delicious food and drinks and views so clear you won't even have to take your eyes off the beach. Viva Mexico by Royalton Suites Cancun
Ingredients:
- 1.5 oz tequila or mezcal
- 1.5 oz watermelon liqueur
- 4 mint leaves
- 1 oz lemon juice
- 0.5 oz simple syrup
How to Make It:
- Place a mint leaf at the bottom and then add ice up to the middle of your glass.
- Combine the watermelon liqueur, simple syrup, lemon juice and tequila in a shaker glass or separate glass.
- Once fully mixed, pour the concoction over the ice, add extra mint leaves as a garnish and enjoy it.
