How To Make The Monck Beach Cocktail From Ambergris Cay In Turks And Caicos

There's a moment when you're approaching Ambergris Cay in the private island resort's private airplane that you'll pinch yourself just to make sure you're not dreaming. In fairness to the rest of Turks and Caicos, there's hardly a square foot of these islands that isn't beautiful, but Ambergris Cay is so special in its luxurious-yet-familiar concept and design that you'll never want to leave. Not so much in a sense of "This is paradise and I could live like this forever," as much as "This feels like home."
Still, let's be honest—this is paradise, and we could all live like this forever. At least that's what I thought when I was enjoying the resort's incredible cuisine after a day of exploring the water surrounding the island. Not to mention the incredible list of custom cocktails made with ease and a smile by our friendly, talented bartender, who was also more than willing to let me try my hand at one of his many margarita recipes (he also made me a killer blueberry marg that might be the best I have ever had in the Caribbean).
But the star of Ambergris Cay is the resort's signature cocktail, the Monck Beach cocktail, which is named for the jaw-dropping white sand beach on which the 10 one-bedroom suites are located. It's the perfect cocktail for sipping while you relax in a private plunge pool, or while splashing with your friends and family on your own pool's patio.
Ambergris Cay’s Monck Beach Cocktail
Ingredients:
- 5 ounces of Midori
- 1.5 ounces of vodka
- Half an ounce of lime juice
- Half an ounce of simple syrup
How to Make It:
- Combine all of the ingredients in a shaker filled with ice.
- Shake well and pour over ice in a wine glass or other stemmed cocktail glass.
- Garnish with cucumber slices and fresh mint.
